Sugar-Free Freezer Jam is My Jam!

I was on a search for a sugar-free version of jam for my son (#autismrecovery), but I was not (nor will ever be) willing to buy anything with artificial sweeteners. While sugar is definitely horrible for you (see blog post) and an ingredient we are avoiding to heal my son's gut (another post, another day), artificial sweeteners are an entirely different category of "Why on Earth is this stuff approved for human consumption?!" Among the many health reasons to avoid artificial sweeteners, the top reasons I avoid them are because they cause you to crave sweeter and sweeter foods, they are addictive, and they increase your risk for cancer, metabolic syndrome, and type 2 diabetes. (1) I quickly found out there are NO options for ready-made jams without sugars on the store shelves. I had to get out my food processor and channel my inner Betty Crocker. (I've seen a lot more of her lately as we've cleaned up the ingredient list in our diets!)
I stumbled across something AMAZING in my search for a homemade option. Per all my prior knowledge, pectin needs sugar to thicken. It was as good as law as far as I knew. You guys, there's a natural citrus pectin activated by calcium that requires a very little amount of any kind of sweetener to gel! You can use honey, fructose, sucanat, concentrated fruit sweetener, maple syrup, agave, frozen juice concentrate, stevia, xylitol, Splenda...basically anything! Pomonas Universal Pectin is the only pectin I will ever have in my pantry again. Using this pectin, I made my favorite and forever jam recipe.

This sugar-free freezer jam is simply delicious! You will not miss the piles of extra sugar, pinky swear. In fact, I think you may prefer it! Feel free to substitute your favorite crushed fruit, even frozen, in this recipe; strawberries are my FAVORITE! Just keep it measuring at two cups of fruit AFTER it is crushed, not before. For sweetener, I use Lankato Munkfruit 1:1 Sugar Substitute, but you can also use Swerve Granular Sweetener or another cup-for-cup sugar replacement. Remember, do not use artificial sweeteners...they are TOXIC!
This, used in moderation, complements my #ketolifestyle beautifully! I had a spoonful of it on freshly whipped cream last night for a delicious night-cap.
TIP: After mixing up the calcium water from the Pomonas Universal Pectin box, you can keep it in a sealed jar in the fridge for a long time! Just label it so you know what that random jar of liquid is in the fridge ;) "Stored in the refrigerator, calcium water will last many months; it can be frozen for even longer storage. When you take your jar out of the refrigerator, look at it before shaking it. You should see white powder settled at the bottom and floating near the bottom of the jar, with clear water above that. If you see any colors or mold in the jar, discard the calcium water. Always shake well before using." (2)
